After a life of eating the standard American diet, I came to realize things could be better. I came to realize that we really are what we eat.
After eating out, and eating meat, I would often feel heavy and ill. It would pass, and return when I ate certain foods. Several years ago, I cut out red meat, then chicken. I kept the dairy, as I loved cheese, especially pizza.
I turned to organic/non-GMO ingredients, and I have never regretted that choice. Minimizing chemicals in our foods is key to health. I started investigating foods, and learned about animal agriculture, and it’s impact on the Earth.
After becoming informed and watching a few documentaries, I decided to become vegan, and have never looked back. It is not a diet, but a way of life. Vegan means avoiding all animal products: meat, eggs, and dairy. It is the only diet documented to reverse heart disease, as well as helping or curing many illnesses. It has a minimal impact on the Earth, and it saves the animals.
I now eat vegan, avoid any extra salt and oils, and always buy organic/non-GMO ingredients. I eat as much raw as I can, and limit my meals out.
I have listed some of my favorite recipes and have never loved cooking and eating as much as I do now. (More recipes to come)
The body can heal itself if given the right nutrients and the body is balanced. Building one’s immune system is key.
My philosophy is that I treat the person individually and as a whole. Our lives are a combination of many things, all related, and affects us on many levels. What we put in our bodies affects our health and well being. Part of my work is educating people on foods and having a more conscious lifestyle, so we can feel well and be happy!
